These Skinny BBQ Chicken Tostadas are my go to dinner on busy nights. My whole family loves them, and the kids love getting to help make their own personal Tostada. It's like a taco and a pizza came together and created this delicious Skinny BBQ Chicken Tostada.
I am always looking for new, quick and easy lunches I can whip up in a hurry. These Skinny BBQ Chicken Tostadas are a perfect combination of Mexican food and BBQ and make a quick, healthy and delicious recipe.
How to make Skinny BBQ Chicken Tostadas Recipe:
Step 1:Preheat oven to 400 degrees F.
Step 2: Place corn tortillas on a baking sheet. I used the hard shell but you could also use soft. They will be more difficult to transfer, but it is doable.
You could also do this as nachos if you can’t find the hard tortillas, tortilla chips work just as well.
Step 3: Spread 1 Tablespoon BBQ sauce on each tortilla.
Step 4: Top each tostada with 1/8 cup mozzarella cheese. If you aren’t a fan of mozzarella cheese, you could also use cheddar, Colby jack, pepper jack, etc. Really any cheese would work with this, but the mozzarella makes it taste like a pizza.
Step 5: Mix remaining BBQ sauce with shredded chicken and put 1/4 cup BBQ chicken on top of each tostada.
Sometimes my husband likes to put a little extra on, but for me and my kids, I usually just do 1/4 cup of the chicken mixture.
Step 6: Sprinkle on 1 Tablespoon red onion, 1 Tablespoon tomato and 1 Tablespoon cilantro on top of each tostada.
If you, or you kids, don’t like these ingredients, you could easily take or swap them out.
Step 7: Bake for 6-8 minutes. Turn oven to high broil and broil for 1-2 minutes.
This recipe is so easy to adapt to how many people you are feeding. My husband and I will each eat two of these for a meal, and are perfectly satisfied.
You could also eat one for a snack. Or three. Doesn’t matter how many you eat, we don’t judge, they are just that good.
Other toppings you could add:
You could put any topping on that you’d like. This recipe is so flexible. It’s practically a pizza on a tortilla.
–Pineapple. If you have never put pineapple on your bbq chicken pizza, you need to. It can be from a can, but the real fresh stuff is out of this world.
–All the Meats. We love meat pizzas. We put sausage, pepperoni, ham, chicken, bacon, and even steak. Yes steak. You can never go wrong with meat on pizza.
–Various Sauces. Most people stick to marinara sauce. I love some good marinara, but I also love barbecue sauce, or Alfredo sauce. When I make a vegetarian pizza, I love using Alfredo sauce as the base.
We also love adding a little balsamic glaze to our pizza’s just for an extra kick and a little more sauce. Nobody wants a dry pizza so this glaze is delicious. I usually buy it at the grocery store, next to salad the dressings.
–Veggies. I love putting a ton of vegetables on my pizza. They add such a unique states and texture, and they taste best when they have melted cheese on them.
I love artichokes, peppers, tomatoes, olives, green onions, spinach, cilantro, diced zucchini, etc. Really and vegetable would work on pizza as long as it is cooked and softened.
I keep all of the ingredients for these tostadas on hand so I can make them up in a hurry. Seriously, this flavor combination is amazing.

Ingredients
- 4 (6") corn tortillas
- 8 Tablespoons BBQ Sauce
- 1 cup cooked chicken shredded
- ½ cup shredded Mozzarella cheese
- 4 Tablespoons red onion diced
- 4 Tablespoons roma tomato diced
- 4 Tablespoons cilantro chopped
Instructions
Preheat oven to 400 degrees F.
Place corn tortillas on a baking sheet.
Spread 1 Tablespoon BBQ sauce on each tortilla.
Top each tostada with 1/8 cup mozzarella cheese.

Are the corn tortillas already crunchy or will they harden up upon cooking?

They are still a little soft, but the broiling at the end adds a little crispiness. Baking for 6-8 minutes gets them heated through.

Everyone in my fam loved this!!! We added black beans too for the topping. For the chicken I just threw frozen chicken breast in crock with a lil bbq sauce. Such an easy dinner!! Each one of my kids made their own version of the tostada. That was fun too.
