Ingredients

Chicken & broccoli

  • 1½ lbs 650 g boneless chicken thighs
  • 2 tbsp 2 tbsp fresh ginger, minced
  • 2 2 garlic clove, mincedgarlic cloves, minced
  • 1 tbsp 1 tbsp lime juice
  • 1 tbsp 1 tbsp tamari soy sauce
  • 1 tsp 1 tsp turmeric
  • 1 lb (5 cups) 450 g (1.2 liters) broccoli
  • 1 tbsp 1 tbsp coconut oil
  • salt if needed

Satay sauce

  • 1¾ cups 425 ml coconut cream
  • 1 tbsp 1 tbsp red curry paste, minced
  • 2 tbsp 2 tbsp tamari soy sauce
  • 13 cup 80 ml peanut butter

Serving

  • 4 tbsp 4 tbsp salted peanuts, chopped (optional)
  • 4 tbsp 4 tbsp fresh cilantro, chopped (optional)
  • ½ ½ red chili pepper, slicedred chili peppers, sliced (optional)

Making low carb simple

Instructions

  1. Cut the chicken into bite-size pieces and place in a bowl or a plastic bag.

  2. Add the ginger, garlic, turmeric, lime, and tamari. Let marinate for 10 minutes.

  3. While the chicken is marinating, combine the ingredients for the satay sauce in a small saucepan and bring to a boil.

  4. Let simmer on low heat for 5–10 minutes until the sauce is of desired consistency. Season to taste and keep warm.

  5. Heat a wok or large frying pan on medium-high heat with coconut oil. Add the garlic and fry the chicken and broccoli until the chicken is thoroughly cooked.

  6. Serve the sauce with the chicken and broccoli. Sprinkle with crushed peanuts and fresh cilantro for extra crunch and flavor.

Tip

You can also thread the chicken pieces on a skewer and grill them in the oven or on the barbecue.

    It says 12 g carbs per portion.

    Very yummy. I've made satay sauce before but this was the nicest so far. It does not require long prepping or cooking times, so it might become a weekday staple after work.

    Just had this, I cooked the chicken thighs with the marinade, made the sauce, then at the end of cooking mixed the chicken with the sauce, so all the chicken juices and satay sauce were mixed together. I served it with veg from the garden, (new potatoes for hubby and courgette noodles and broad beans) for me. the sauce mixed well with the "noodles"
    excellent!!

    Very good dish for meal prepping: I prepared it with steamed broccoli, and had an easy lunch for the entire week. I used chicken breasts instead of thighs, so that made cutting up the meat very easy. Side note, in case anyone just glances over the ingredients & bases their shopping list on that -- make very sure you buy ground up/powdered coriander seeds. I bought the whole seeds & am now constantly biting into them when I eat...not pleasant.

    Great quick & easy meal. I cooked the chicken on the bbq, it was delicious after being marinated for just about half an hour then I served it with cauliflower & broccoli rice. Hubby loved it too!!

    Really tasty and quick to make. Pork and coconut aminos made for a good substitute for the chicken and tamari. Will make again! :)

    Used half the coconut milk, added fish sauce, fresh lime juice, dried galangal and grated and powdered ginger to sauce. Made it taste closer to standard Satay. Did cut the fat% by quite a bit, of course. Very allergic to shellfish, so Thai curry paste not an option. I find a lot of the DD recipes do not scale well and you end up with far too much sauce (unless you make enough cauliflower rice to drizzle it over at another meal).

    it´s a nice recipe...but it contains ingredients i couldn´t stock at home because of carb addiction issues; like a jar of peanut butter :(

    Ca, you may look around a bit and find single-serve packets of peanut butter at your grocery.

    For this recipe you can use coconut cream which contains 35% fat.

    I understand about having peanut butter around the house. You can really tell the difference (taste the sugar in it) between the main brands and a peanut only type. The peanut only will be less thick and may require modifying the recipe.
