Wondering how to make delicious, gut-friendly kefir at home?

Teeming with beneficial probiotics, kefir is an essential food in any good-gut regime. A fermented drink most often made from cow’s milk, it can also be made with coconut milk, coconut water or any other nut ‘milks’. This fermented milk drink is a good store cupboard staple because you can use it in a number of ways – for example, as a base for smoothies or as a splash of ‘milk’ on cereals and in desserts, or even as a naturally ‘live’ skin cleanser!

For something so powerful, it’s surprisingly easy to make your own – a couple of large jars and a few muslin cloths are really all the kit you need, plus a pack of kefir starter grains (freeze-dried or fresh bacteria) to make your first batch. Many people like to use fresh, live grains as they contain more beneficial bacteria, (up to fifty strains of yeasts and bacteria), particularly Lactobacillus. The freeze-dried versions do have a shelf life, so they lose potency over time. However, live kefir grains can last indefinitely if cared for correctly.

Liz’s favourite almost-instant kefir powder sachets come from Nourish. She also uses fresh milk starter grains from The Kefir Company, who also offer excellent water ‘kefir’ starter grains too. Kefirdoes tend to have the smell and consistency of sour milk – especially if you let if ferment more than a couple of days. You might want to add fruit or raw honey to sweeten the flavour. Don’t forget to make sure your family know not to throw it out – it hasn’t gone off, it’s meant to smell like that!

  • Kefir ispackedwith beneficial probiotics that can help soothe our gut
  • Add a spoonful of kefir to give face masks a skin-friendly probiotic boost

Ingredients

    Milk kefir

    • 1 tsp milk kefir grains
    • 250ml organic whole (full-fat) milk – look for grass- or pasture-fed

    Water kefir

    • 40g organic unrefined cane sugar, coconut sugar or jaggery (raw sugar)
    • 500ml pure, filtered water
    • 2 tbsp kefir grains

    Method

    Milk Kefir

      1. Gently rinse the milk kefir grains with fresh milk or spring water and tip them into a sterilised glass jar. Pour in the milk and stir, using a wooden spoon. Loosely cover with the lid, so the gas that is produced can escape while it ferments, or cover with a cloth.
      2. Leave it to stand at room temperature for 12–48 hours until it sours to your liking(the longer you leave it, the thicker and creamier it gets) . If you prefer, seal the lid and leave it to ferment in the fridge for a few days, bearing in mind that it will ferment more slowly in a cooler environment.
      3. Stir the mixture, then pour it through a plastic sieve into a plastic or glass container. This is then ready to drink, or you can leave it to ripen in a sealed bottle for a little longer, either at room temperature or in the fridge, releasing the lid occasionally to allow the gas to escape.

If you find the taste too sour, you can flavour it with a little raw honey, maple syrup or some blended fruit.

    Water Kefir

    1. Dissolve the sugar in a small amount of hot water in the jar. When it is dissolved add the filtered water, then the kefir grains, and put the lid on.
    2. Leave for 24–72 hours, stirring regularly to speed up fermentation.
Strain through a plastic sieve, retaining the grains (see Milk Kefir).
    3. The kefir water is now ready to drink. Drink as it is or add flavourings such as orange or lemon juice, or use as part of a further recipe.

While both are still healthy choices, you are not getting the full spectrum at the full potency (some brands advertise 10 strains, genuine kefir has upwards of 40-60 strains) that home-made kefir with kefir grains will give.

What's the difference between water kefir and milk kefir? ›

While milk kefir provides significant amounts of protein as well as probiotics and prebiotics, water kefir can be a significant probiotic and prebiotic source for vegans and people who are allergic to dairy products. Both of these grains are important for their potential health benefits.

Is kefir healthier than yogurt? ›

The biggest nutritional difference between the two is that kefir contains more probiotics than yogurt. While yogurt also contains some probiotics, kefir is more potent. If you are looking to improve digestion or gut health, kefir is the better choice.

Can I use store-bought kefir to make my own? ›

The answer is yes...and no. If you want to make milk kefir from pre-made kefir, either store-bought or from a friend, then you may have success one, two, three, or even four times. It is also possible that you may not end up with a successful batch of cultured kefir at all.

Is store bought kefir real kefir? ›

Commercial kefir is prepared the same way yogurt is made, with different bacteria from what's used in traditional kefir. Nor do most commercial versions contain yeast. "It's a different fermentation process that is missing the traditional yeast and the bacteria," Willing said.

Can I drink kefir every day? ›

Is it better to drink kefir or take probiotics? ›

Eat things like kimchi, yogurt, and kefir

"At the moment, the current evidence suggests you're better off not taking commercial probiotics, but just taking fermented foods," Spector said. "Fermented foods are basically probiotics — live microbes — but actually in food, as opposed to in a capsule."

Is kefir or kombucha better? ›

Although kefir and kombucha both contain healthful microbes, kefir is a richer source of lactic acid bacteria (LAB). So you could think of kefir as a drinkable probiotic supplement, and kombucha as more of a digestive aid. Another big difference is that kombucha typically has caffeine, since it's made from tea.

Which is better coconut kefir or milk kefir? ›

The main difference between regular kefir, or milk kefir, and the coconut version, is that coconut is a vegetarian and vegan alternative. It's also a good alternative for those who are dairy intolerant, but it doesn't contain the same beneficial protein and calcium as milk.

How long does homemade kefir last? ›

Just like yogurt, homemade kefir can be kept for 2 to 3 weeks in the refrigerator in an airtight container. However, to extend its shelf life, avoid eating it directly from the jar. But, since it tastes so good and is so versatile, you'll likely finish it in a few days!
