THE BEST AIR FRYER FRIED CHICKEN

I came to the States when I was almost 11 years old, and upon arrival – literally right when we arrived – we were introduced to McDonald’s Happy Meals. How else do you welcome a 10-year old and a 7-year old to the United States? 🇺🇸

BUT, our second stop? POPEYES! For my parents. My mom’s eyes popped out when she sank her teeth into that fried chicken. It was true love at first bite, and that’s when we knew why it was called POPeyes. 😜

Thus, thinking about Popeyes chicken, I was very skeptical about trying fried chicken in an Air Fryer. As you are, too, I’m sure of it. To that point, let me just say this; this Air Fryer Fried Chicken is really delicious. It’s crispy and mega flavorful, BUT do not expect KFC or Popeyes type of fried chicken. M’kay?

WHY FRY CHICKEN IN THE AIR FRYER?

Traditional, crispy, buttermilk fried chicken coated with pork panko crumbs is pretty amazing, though. Rather than deep frying or submerging these chicken breasts into lots of oil, I decided to try out the Air Fryer version.

Air fryer fried chicken is lighter and healthier, obviously, but it’s also faster, and nowhere near as messy.

HOW TO MAKE FRIED CHICKEN IN THE AIR FRYER

For this Air Fryer Chicken recipe I decided to use chicken breasts, only, but this recipe works with thighs, drumsticks, and wings, too. I also used coconut flour and pork panko crumbs to keep the chicken lower in carbs, but you can use plain breadcrumbs and regular flour, if you want.

    1. First, you’ll want to combine buttermilk and Frank’s hot sauce in a large mixing bowl. Don’t worry about the hot sauce; it won’t make the chicken too spicy, but it will inject it with lots of flavor.
    2. Add chicken breasts (or other chicken pieces) to the buttermilk mixture and let marinate in the fridge for at least 1 hour, and up to 24 hours.
    3. When ready to prepare the chicken, take it out of the fridge 10 to 15 minutes before cooking.
    4. In a shallow plate, combine flour with pork panko crumbs and seasonings. Now, about the flour; I use coconut flour for almost all things that require breading because I want to keep carbs at a minimum. The coconut flavor is very subtle, in case you’re worried about that. However, it’s all good if you want to just use all-purpose flour.
    5. Coat all sides of the chicken with the flour mixture, shaking off any excess flour. Place chicken in the Air Fryer basket in a single layer. Spray with cooking spray and set to cook at 390˚F for about 20 to 22 minutes. I also like to use these air fryer parchment paper liners for easier cleanup.
    6. Half way through cooking, open up the air fryer basket; flip over the chicken and coat with cooking spray. Continue to cook until done. Please use an Instant Read Thermometer to make sure that chicken is cooked through; chicken is done when internal temperature registers at 165˚F.

TIPS FOR AIR FRYER FRIED CHICKEN

    • Any traditional fried chicken recipe will work in an Air Fryer, however, judging by experience, I suggest not to add a very thick breading to the chicken because it doesn’t cook through. I tried and I ended up with lots of white floury spots on the outside, and pinkish spots on the inside of the chicken.
    • I advise to dip the buttermilk soaked chicken only once in a well seasoned flour-mixture. For a bit more crunch, add panko crumbs to the flour-mixture.
    • Use cooking spray to coat the chicken before cooking.
    • Let chicken rest for 5 minutes before serving.

    HOW TO STORE FRIED CHICKEN

    • Store leftovers in an airtight container and keep refrigerated for up to 4 days.

Total Time 1 hour hr 25 minutes mins

    Ingredients

    FOR THE CHICKEN BREASTS

    • 4 boneless, skinless chicken breasts
    • 1/2 cup buttermilk
    • 1/4 cup hot sauce

    FOR THE FLOUR MIXTURE

    • 3/4 cup coconut flour (you can also use all-purpose flour)
    • 1/2 cup pork panko crumbs (you can also use regular panko crumbs or breadcrumbs)
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon Italian seasoning
    • 1/2 teaspoon sweet or smoked paprika
    • salt and pepper to taste

    Instructions

    • Combine buttermilk and hot sauce in a large mixing bowl; place chicken breasts in the buttermilk mixture. Cover and refrigerate for 1 hour, and up to 24 hours.

    • Take chicken out of fridge and set on counter while preparing flour mixture.

    • In a shallow plate combine flour, breadcrumbs, garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.

    • Preheat Air Fryer to 390˚F.

    • Line Air Fryer basket with parchment paper (optional).

    • Remove chicken breasts from the buttermilk, allowing excess to drip off.

    • Dredge chicken in the flour mixture, shaking any excess off.

    • Place a single layer of chicken breasts in the basket, with space in between the pieces. I cook 2 to 3 chicken breasts at a time.

    • Spray with cooking spray and air fry for 10 minutes.

    • Open the air fryer basket and flip over the chicken pieces; spray with cooking spray, and continue to cook for 10 to 12 more minutes, or until chicken is cooked through and an instant read thermometer registers at 165˚F.

    • Repeat with the remaining chicken.

    • Let stand 5 minutes.

    • Serve.

    FAQs

How do you keep fried chicken crispy and juicy? ›

Proper cooling sets the crust and ensures that the chicken will have done all its carryover cooking. I like to cool any leftover chicken completely and then store in a paper towel-lined airtight container in the fridge. The paper towel absorbs condensation and keeps that chicken crisp for midnight snacking.

How do you crisp chicken in an air fryer? ›

If you happen to own an air fryer, you can certainly reheat your fried chicken in its basket. Preheat the air fryer to 375 degrees Fahrenheit and let the fried chicken come to room temperature. Next, arrange the fried chicken in a single layer and cook it for about four minutes, flipping it once to ensure even cooking.

Why is my chicken not crisping in the air fryer? ›

Dry the outside of the food properly before you add oil. Do not use too much oil, as this will make the food less crispy and more fattening. Meat or poultry can be lightly brushed with oil or marinated to get the crispiest results.

What makes chicken crispy baking soda or baking powder? ›

That trick is a sprinkling of baking powder, and it'll get you the crispiest, crackliest bites of fatty, salty skin imaginable, whether you're cooking just one thigh, a plate of wings, or an entire bird. Baking powder, it turns out, is good for quite a lot more than baking.

Do you flip air fried chicken? ›

Cook at 360° for 9 minutes. Then flip the chicken breast over and cook for another 9 minutes. Larger chicken breasts need more cook time, and smaller ones need less time. Open the air fryer immediately so it doesn't continue cooking in the heat.

How do you keep chicken from getting rubbery in an air fryer? ›

Just follow the instructions and make sure you keep an eye in the temperature of the chicken in the final minutes. Since the Air Fryer works with convection heat, there is no need to cook chicken at very high temperatures, as it may quickly dry out and turn rubbery.

Why is air fryer chicken so juicy? ›

Air fryers seal in the juices

Jess Dang, founder of Cook Smarts, told Insider that an air fryer makes juicier chicken breast than stovetop or oven cooking. The reasons are threefold. First is the high heat, which quickly creates a brown, crispy layer on the outside of the chicken breasts much like oven roasting.

What is the best temperature to air fry chicken? ›

After testing a variety of temperatures, I found that 375 degrees F is the best temperature for air frying chicken. Because the air fryer uses convection heat, you do not need to set it as high as you would an oven (in a regular oven, 425 degrees F is best for baking chicken, like Bacon Wrapped Chicken Breast).

How do I get my chicken to brown in the air fryer? ›

The usual suspect for the lack of browning on food is excess moisture. So if you pat it down or allow your meat to air dry in the fridge, that would help out. Although your air fryer is oil less, you do have brush on a bit of oil to promote browning.

How do you keep fried food crispy for longer? ›

Drain and Cool Properly: After frying, be sure to place your food on a wire rack or paper towel-lined baking sheet. This will help remove excess oil and keep them crisp for longer. Additionally, if you're planning to serve the fried foods later, make sure to cool them in the refrigerator first before reheating.

How do you keep fried chicken crispy the next day? ›

Placing it on a wire rack in the refrigerator will help maintain air circulation, preventing condensation that can make the coating soggy. Paper Towels: Place a layer of paper towels between the fried chicken pieces when storing them. This helps absorb any excess moisture and keeps the coating crisp.

Why does my fried chicken get soggy after frying? ›

While gluten is a common cause of soggy fried chicken or pork chops, it's by no means the only one. Another reason your fried chicken is turning out soggy is that the oil temperature is falling below the ideal frying level, which is right around (or slightly above) 350 degrees Fahrenheit.
