My daughter and I are coconut milk lovers…but not to drink! Not sure why – I just never really warmed up to a glass of coconut milk. But coconut milk popsicles! Yes please!
My daughter prefers her coconut milk popsicles with very little added to it. Plain old frozen coconut milk is just fine by her. However, I do like to mix it up a bit as she is known for keeping me on my toes and suddenly requesting “colored coconut milk popsicles.”
You would think that it would be pretty simple to create delicious coconut milk popsicles right?
Well, in theory it is but when coconut milk freezers, the flavor of the milk itself is somehow enhanced, often times overpowering the flavors in your popsicle add-ins. There seems to be a pretty fine balance when it comes to ingredients.
Today I am sharing my daughter’s three favorite “colored coconut milk popsicle” recipes. She is NOT a sweet lover but I assure you, she gobbles these healthy treats down any time of year. And I don’t feel bad about it at all. That coconut milk packs a nutrient rich punch and I carefully select the add-ins to ensure the coconut milk popsicles stay low in sugar and are completely nourishing!

Yummy!!! I haven’t thought of this!!! I drink coconut milk, but my Granddaughter, Hobbit Girl-Child, doesn’t like it yet. She loves popsicles, so I am def going to make these!!! She loves blueberries!
